If it is the morning of 14 September and you have nothing, you still have three options. None of them will be a hand-pleated ukadiche modak, but all of them will get a modak onto the plate.

Worth knowing before you order delivery

Steamed modak and delivery apps do not mix. A 30–45 minute ride in a hot bag steams the shell a second time and it collapses. If the order has to travel, choose mawa, kaju, dry fruit or chocolate modak — they arrive exactly as they left.

The naivedya is traditionally twenty-one modak. Everything you buy above that number is for people, not for the offering — which makes the maths easier than it looks.

How to tell a good ukadiche modak from a mediocre one

  • The shell should be translucent, not chalky white. Properly steamed rice flour goes slightly see-through and you can just make out the darker filling underneath.
  • Count the pleats. Hand-shaped modak has somewhere between 11 and 21 folds running to a clean point. A perfectly symmetrical shell with a seam is mould-made — fine, but not the same thing.
  • The filling should be loose, not a solid puck. Fresh coconut and jaggery stay moist; desiccated coconut sets hard and tastes dusty.
  • Ask when it was steamed. Any kitchen that is proud of its modak will give you a time. One that says “this morning” at 7pm is selling you a four-hour-old shell.
  • Ghee, not oil, on top. Ukadiche modak is served with a spoonful of warm ghee — if the shop does not offer it, ask.

  • Steamed modak: keep at room temperature in a closed steel box, eat within four to six hours. To revive, steam for three minutes — never microwave, which turns the shell to rubber.
  • Mawa, malai and any milk-based modak: straight into the fridge, eat within two to three days, take out 15 minutes before serving.
  • Chocolate modak: below 22°C. A Dubai car in September will melt a box in under ten minutes, so carry it in the cabin, not the boot.
