How to tell a good ukadiche modak from a mediocre one
- The shell should be translucent, not chalky white. Properly steamed rice flour goes slightly see-through and you can just make out the darker filling underneath.
- Count the pleats. Hand-shaped modak has somewhere between 11 and 21 folds running to a clean point. A perfectly symmetrical shell with a seam is mould-made — fine, but not the same thing.
- The filling should be loose, not a solid puck. Fresh coconut and jaggery stay moist; desiccated coconut sets hard and tastes dusty.
