  1. Toast the kataifi pastry
    Mix shredded kataifi with melted butter. Spread it on a baking tray and bake at 400°F (about 200°C) until golden and crispy. This can take around 15–20 minutes, stirring occasionally so it browns evenly. Let it cool.
  2. Prepare the pistachio filling
    Mix the toasted kataifi with sweetened pistachio cream until the mixture becomes thick and scoopable.
  3. Form the filling balls
    Use an ice-cream scoop or spoon to shape the mixture into small balls. Place them on a tray and freeze for about 15 minutes so they become firm.
  4. Make the marshmallow coating
    Melt butter in a pan over medium heat. Add mini marshmallows and heat until they soften and partially melt. Stir in milk powder and cocoa powder, then remove from heat.
  5. Wrap the filling
    Lightly oil your hands. Take a portion of the marshmallow mixture, flatten it slightly, place a frozen pistachio ball in the center, and wrap the marshmallow layer around it to form a sphere.
  6. Dust and serve
    Roll the finished ball in cocoa powder and place it in a cupcake liner. The result is a soft cocoa-dusted ball with a chewy marshmallow exterior and crunchy pistachio-kataifi center.
